Grilled Corn Salad
Directions:
- Place the cooking pot into the base of the Cosori Smart Indoor Grill, followed by the grill grate.
- Select the Air Grill function on high heat, adjust time to 12 minutes, press Shake, then press Start/Pause to preheat.
- Brush the corn, chilies, and onions with 1 tablespoon of oil and season to taste with salt and pepper.
- Place the corn ears onto the preheated grill grate, then close the lid. Press Start/Pause to begin cooking.
- Flip the corn ears over halfway through cooking. The Shake Reminder will let you know when.
- Remove the corn ears and place the chiles and onions onto the grill grate.
- Select the Air Grill function on high heat, adjust time to 8 minutes, press Shake, and press the Preheat button to bypass preheating. Press Start/Pause to begin cooking.
- Turn the chilies and onions over halfway through cooking. The Shake Reminder will let you know when.
- Remove the chilies and onions when done.
- Cut the corn kernels from the corn ears and place in a large bowl.
- Remove the seeds and stems from the chilies and chop into ½-inch pieces. Add to the bowl.
- Remove the stems from the onions and chop into ½-inch pieces. Add to the bowl.
- Whisk together the lime juice, hot sauce, and remaining olive oil in a bowl and pour over the grilled vegetables.
- Add the cilantro to the vegetables and stir until everything is well incorporated. Season to taste with salt and pepper.
- Serve immediately.
