Grilled Corn Salad

Directions: 

  1. Place the cooking pot into the base of the Cosori Smart Indoor Grill, followed by the grill grate.  
  2. Select the Air Grill function on high heat, adjust time to 12 minutes, press Shake, then press Start/Pause to preheat. 
  3. Brush the corn, chilies, and onions with 1 tablespoon of oil and season to taste with salt and pepper.  
  4. Place the corn ears onto the preheated grill grate, then close the lid. Press Start/Pause to begin cooking. 
  5. Flip the corn ears over halfway through cooking. The Shake Reminder will let you know when.  
  6. Remove the corn ears and place the chiles and onions onto the grill grate.  
  7. Select the Air Grill function on high heat, adjust time to 8 minutes, press Shake, and press the Preheat button to bypass preheating. Press Start/Pause to begin cooking.  
  8. Turn the chilies and onions over halfway through cooking. The Shake Reminder will let you know when. 
  9. Remove the chilies and onions when done. 
  10. Cut the corn kernels from the corn ears and place in a large bowl.  
  11. Remove the seeds and stems from the chilies and chop into ½-inch pieces. Add to the bowl. 
  12. Remove the stems from the onions and chop into ½-inch pieces. Add to the bowl. 
  13. Whisk together the lime juice, hot sauce, and remaining olive oil in a bowl and pour over the grilled vegetables.  
  14. Add the cilantro to the vegetables and stir until everything is well incorporated. Season to taste with salt and pepper.  
  15. Serve immediately.
