Keto Superfood Brownies
Directions
- Melt the butter and 1 cup dark chocolate in a microwave-safe bowl until melted and smooth.
- Massage the fresh mint leaves into the Lakanto Monkfruit sweetener with your hands to release the mint oils.
- Combine the melted butter and chocolate, mint and sweetener, vanilla extract, peppermint extract, and eggs in a large bowl. Whisk until smooth.
- Add the arrowroot, cacao powder, collagen powder, and salt. Stir to combine. Add ¼ cup chocolate chips and stir to combine.
- Grease a 7-inch nonstick baking pan with coconut oil spray. Add the brownie batter and top with 2 tablespoons remaining chocolate and flakey sea salt.
- Select the Preheat function on the Cosori Air Fryer, adjust the temperature to 300°F, and press Start/Pause.
- Insert the baking pan into the preheated air fryer basket.
- Set the temperature to 300°F, time to 45 minutes, and press Start/Pause.
- Remove brownies when a toothpick inserted into the center comes out with slight crumbs and brownies are set.
- Let brownies cool for 30 minutes before cutting into bars.
