Keto Superfood Brownies


  1. Melt the butter and 1 cup dark chocolate in a microwave-safe bowl until melted and smooth. 
  2. Massage the fresh mint leaves into the Lakanto Monkfruit sweetener with your hands to release the mint oils. 
  3. Combine the melted butter and chocolate, mint and sweetener, vanilla extract, peppermint extract, and eggs in a large bowl. Whisk until smooth. 
  4. Add the arrowroot, cacao powder, collagen powder, and salt. Stir to combine. Add ¼ cup chocolate chips and stir to combine.
  5. Grease a 7-inch nonstick baking pan with coconut oil spray. Add the brownie batter and top with 2 tablespoons remaining chocolate and flakey sea salt.
  6. Select the Preheat function on the Cosori Air Fryer, adjust the temperature to 300°F, and press Start/Pause.
  7. Insert the baking pan into the preheated air fryer basket. 
  8. Set the temperature to 300°F, time to 45 minutes, and press Start/Pause.
  9. Remove brownies when a toothpick inserted into the center comes out with slight crumbs and brownies are set.
  10. Let brownies cool for 30 minutes before cutting into bars.
