Lemon Cake with Lemon Buttercream Frosting and Fresh Berries


  1. Combine butter and sugar in a standing mixer with a paddle attachment. Beat on high speed for 3 minutes until light and fluffy.
  2. Add eggs, lemon zest, lemon juice, yogurt, and vanilla. Beat on medium for 2 minutes.
  3. Add flour, baking powder, baking soda, and salt. Beat on low until batter comes together.
  4. Grease a 6 inch cake pan.
  5. Set the temperature on the Cosori Air Fryer to 300°F and press Start/Stop to preheat.
  6. Add batter to cake pan.
  7. Place cake pan in preheated air fryer.
  8. Cook at 300°F for 40 minutes.
  9. Remove when a toothpick inserted in the middle comes out clean.
  10. Cool completely.
  11. Beat butter in a standing mixer with a paddle attachment on high for 2 minutes.
  12. Add confectioner’s sugar, lemon juice, heavy cream, and lemon zest. Beat on high for 3-5 minutes until smooth and fluffy.
  13. Frost cake and top with fresh berries.
