Lemon & Thyme Yogurt Cake

  1. Whisk together plain yogurt, sugar, and eggs in a large bowl until well combined.
  2. Sift in the flour and baking powder into the wet batter. 
  3. Whisk in the kosher salt, lemon zest, thyme leaves, and olive oil until smooth. Set aside.
  4. Spray the cake pan accessory lightly with cooking spray and cover the bottom with a round piece of parchment paper.
  5. Select the Preheat function on the Cosori Air Fryer, adjust to 300F, and press Start/Pause.
  6. Pour the batter into the Cosori cake pan accessory and place into the preheated air fryer basket.
  7. Bake for 50 minutes or until the cake feels springy to the touch and a toothpick inserted into the center comes out clean.
  8. Cool cake on a wire rack for 10 minutes; then turn it out of the pan onto the rack.
  9. Combine the lemon juice and powdered sugar in a microwaveable safe small bowl.
  10. Microwave the glaze in for 30 seconds, then mix well until smooth.
  11. Brush the glaze all over the cake until all of the glaze is gone. (some of it will drip off, but most of it will soak in.) Allow the cake to cool, about 1 hour.
  12. Sprinkle with powdered sugar if desired and serve.
