Pork Loin Roast with Cranberry Sauce

Directions
  1. Brush pork with olive oil. Sprinkle with salt, pepper, garlic powder, lemon zest, and chopped rosemary.
  2. Select the Preheat function on the Cosori Air Fryer, set temperature to 360°F, then press Start/Pause.
  3. Line the preheated inner basket with foil. Make sure to securely attach it to the basket.
  4. Place the pork into the preheated air fryer, set time to 25 minutes, then press Start/Pause.
  5. Flip the pork when done and cook for an additional 20 minutes, or until cooked to an internal temperature of 145°F.
  6. Combine all ingredients for the cranberry sauce in a medium-sized pot.
  7. Place pot over medium-high heat. Allow mixture to boil, then reduce to a simmer for 20 minutes or until thickened. Discard ginger, orange peel, and thyme.
  8. Allow pork to rest for 12 minutes before slicing, then serve with cranberry sauce.
