Pumpkin Spice Loaf

Directions: 

  1. Whisk together the pumpkin puree, eggs, oil, buttermilk, vanilla extract, and both sugars until smooth. 
  2. Add the flour, baking soda, salt, cinnamon, pumpkin pie spice, ginger, and nutmeg. Stir with a spatula until combined.  
  3. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 300°F, and press Start/Pause. 
  4. Grease 2 mini loaf pans with oil spray. Pour the batter into the loaf pans, filling each  full. Make any leftover batter into muffins, if desired. 
  5. Insert the loaf pans into the air fryer baskets. 
  6. Set temperature to 300°F and time to 32 minutes, then press Start/Pause. 
  7. Remove loaves when a toothpick inserted into the center of each comes out clean.  
  8. Allow loaves to cool to room temperature before glazing. 
  9. Beat the cream cheese and butter in a stand mixer until smooth. Add the powdered sugar, maple syrup, vanilla extract, and a pinch of salt. Beat until smooth. 
  10. Glaze the mini pumpkin spice loaves with the maple cream cheese glaze and top with chopped pecans or pumpkin seeds.
