Simple Rack of Lamb
Directions:
- Whip the butter in a medium bowl using an electric hand mixer until soft and fluffy, about 3 minutes.
- Fold the rosemary, parsley, and garlic into the butter, then set aside once fully combined.
- Rub the rack of lamb with extra virgin olive oil, then season with salt and pepper.
- Massage the herbed butter gently all over the rack of lamb, including in between the frenched bones.
- Place the lamb directly into the Cosori Smart Air Fryer basket, without the crisper plate.
- Select the Roast function, adjust temperature to 365°F and time to 6 minutes, then press Start/Pause.
- Remove the lamb when done and allow to rest for 5 minutes.
- Slice the rack of lamb and serve immediately.
