Red White and Blueberry Lemon Trifles


  1. Make the lemon pound cake by placing the softened butter to an electric mixer and beat until light and fluffy, about 3 minutes. Add the sugar and beat for 1 minute. Add the egg, lemon juice, lemon zest, and beat until incorporated. Add the flour, baking powder, salt, and beat on low speed until just combined. Pour in the buttermilk slowly while mixing at medium speed. Add the batter to the greased Cosori Cake Pan. 
  2. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 300°F, and press Start/Pause. Place the cake pan into the preheated air fryer.
  3. Select the Bake function on the Cosori Air Fryer, adjust time to 40 minutes, and press Start/Pause. Remove the cake when a cake tester inserted into the middle comes out clean. Allow the cake to cool to room temperature, about 1 hour. Remove the cooled cake from the pan and cut into 1-inch cubes.
  4. Make the lemon filling by placing the heavy whipping cream and powdered sugar in an electric mixer. Beat on high speed until hard peaks form. Fold the lemon curd into the whipped cream and place in the refrigerator until ready to assemble trifles.
  5. Assemble trifles by layering cubes of the cake, then lemon filling, and then fresh berries into the glass serving cups until all the cups are filled to the tops. Serve immediately or place in the refrigerator before serving.
