Rosemary and Thyme Roast Beef


  1. Trim roast of any silverskin or sinew.
  2. Rub the roast with olive oil.
  3. Season the roast with salt, black pepper, garlic powder, onion powder, dried rosemary, dried thyme, and paprika.
  4. Truss the roast with butcher's twine so it holds its shape.
  5. Allow to rest at room temperature for 2 hours.
  6. Preheat the air fryer at 330°F for 5 minutes.
  7. Place the roast in the preheated air fryer basket.
  8. Cook at 330°F for 45 minutes, flipping halfway through cooking.
  9. Remove the meat when done cooking and allow to rest for 20 minutes.
  10. Remove the butcher's twine, slice, and serve.
