Shrimp and Veggie Kebabs

Directions:

  1. Soak the wooden skewers in water for 15 minutes.
  2. Cut the bell peppers and red onion into 1-inch pieces. 
  3. Cut the wooden skewers so they fit into the air fryer. Alternately skewer the shrimp, red onion, and bell peppers until all the shrimp is used up. Spray the skewers lightly with olive oil and season with salt and pepper.
  4. Select the Preheat function on the Cosori Air Fryer and press Start/Pause.
  5. Place shrimp kebabs into the preheated air fryer.
  6. Set temperature to 400°F and time to 8 minutes, then press Start/Pause. Flip kebabs halfway through cooking.
  7. Combine the olive oil, parsley, garlic, and lemon juice in a bowl. 
  8. Remove the kebabs when done, brush with the lemon garlic herb mixture, and serve.
