Southwestern Stuffed Bell Peppers


  1. Heat a large pan over medium high heat with olive oil. Add shallot, garlic, and jalapeno. Sautee for 5 minutes or until soft. Pour mixture into a bowl.
  2. Add ground turkey in the same pan. Saute until turkey is browned and cooked thoroughly.
  3. Add shallot mixture back into the pan.
  4. Add black beans, corn, spices, diced tomatoes, and salt and pepper to taste. Cook to reduce the tomatoes a bit and to meld the flavors. Remove from the stove and add in rice and cilantro.
  5. Spoon turkey mixture into each bell pepper half. 
  6. Sprinkle the top with grated cheese.
  7. Set the temperature on the Cosori Air Fryer to 300°F and press Start/Stop to preheat. 
  8. Line the fryer basket with aluminum foil.
  9. Place stuffed peppers into the preheated air fryer.
  10. Cook at 300°F for 30 minutes. If bell peppers are browning too fast on top cover with foil.
  11. Remove with bell peppers are tender and cheese is golden and melted.
